Trentodoc and its wineries
Mountain bubbles
In the valleys of Trentino, among vineyards that climb the mountainsides up to 800 metres and more, one of the finest Italian sparkling wines is produced: the Trentodoc, a "mountain bubbly" made exclusively with the classic method, the same as Champagne, with a second fermentation in the bottle. In 1993 it was the first classic-method sparkling wine in Italy to obtain the DOC designation. It is made mainly from Chardonnay and Pinot Noir grapes, as well as Pinot Blanc and Pinot Meunier, grown in a climate of strong temperature differences between day and night, which give the wine freshness, elegance and fine aromas.
Its history began in 1902, when the oenologist Giulio Ferrari, after studying in France, founded in Trento the winery that bears his name, planting Chardonnay vines and producing a sparkling wine that could compete with the great French ones; in 1952 the winery was bought by the Lunelli family, who made Ferrari one of the most famous Italian sparkling wine brands in the world, served at major international events. Today, dozens of wineries produce Trentodoc, from large houses such as Ferrari, Rotari and Cavit to small family producers. The bottles age on the lees for at least 15 months, and the riserva versions for at least 36, in cool cellars, sometimes carved into the rock. Many wineries offer guided tours of the cellars and tastings, and the "Trentodoc Festival", held in Trento, is dedicated to these wines.
Tip: book a tour at the Ferrari cellars or in one of the smaller wineries of the Valle dei Laghi; pair Trentodoc with Trentino trout.
